Green Turkey Tacos
1 onion diced
1 jar Salpica Cilantro Green Olive Salsa
1/2 cup white wine
1 lbs turkey loin
Sauté onions in some olive oil in a small Dutch oven. Preheat oven to 325F. Add salsa, wine, and a jar full of water. Bring to simmer. Add turkey, cover, and put in the oven for 2-2.5 hours. Remove turkey. Bring cooking liquid to boil, reduce. Shred turkey. Remove sauce from heat and stir in shreded turkey.
Serve with warm corn tortillas and crumbled goat cheese.
